Into the Wilde

Oh my, it is 115 degrees here in Phoenix, you think Bella cares? She is anxiously awaiting the trip next week to Grandma and Grandpa's cabin in New Mexico. Here she is "practicing" for the trip, putting on her huge snow jacket, boots, mittens, and hat. I try to tell her, "it is too hot right now for that sweetheart!" She just scowls, and whines for me to help her in and out of the jacket. Last time we visited, it was Thanksgiving, and it snowed. She is having fantastic thoughts that it will snow again upon our return. Maybe something magical will happen?

This cabin is a place of refuge for us, no crowds, and gets us back to living the way we wish, and hope we can live someday. This cabin is under construction, an undertaking that has been in progress over two years. This is just the "garage" portion of the main cabin, but to me, it is large, and can be used for many years by all of us until the main house is built.

What A Delight!

Last night, in an attempt to steer from the same 'ol boring dish for dinner, I had remembered I had this delightful recipe for Crispy Chicken Tacos. At about 1 PM I placed frozen boneless skinless chicken breasts in the crock pot with about 5 cups of water and spices. Set the crock on the "high" setting. By 5 pm the chicken was cooked to perfection, and shredded like a dream. I made enough to share with my next door neighbors, Jeff, Chris, and their son Spencer. We frequently share Steve's homemade Chili with them on a regular basis, so this was a new taste sensation for them. I highly recommend this EASY dish, that requires only three ingredients. You will have a delightful southwestern dish in under and hour that will wow your dinner guests, or maybe just yourself! Simply purchase "homemade" salsa from the store, or go all out and prepare the recipe from the link below!
Crisp Chicken Tacos (Tacos de Pollo)


No need to use stale store-bought shells to make crispy tacos. Our easy method turns fresh corn tortillas into crunchy pockets filled with a simple, savory filling. Prep and Cook Time: about 1 hour. Notes: A typical rotisserie chicken yields just enough meat for this recipe. Tacos can be assembled up to 4 hours ahead, then fried just before serving. Or, you can fry them up to 6 hours ahead and recrisp them in a 300° oven for 15 minutes before serving.


3 cups packed shredded cooked chicken meat (see Notes)2 cups (1/2 lb.) shredded jack cheeseKosher saltAbout 2 cups canola oil, divided16 corn tortillas (5 to 6 in.)1 cup coarsely chopped fresh cilantroWooden toothpicksTomato-Cucumber Salsa1. Preheat oven to 200°. In a bowl, mix chicken with cheese and season to taste with salt.
2. Pour 3 tbsp. oil into a medium frying pan over high heat. When hot, add tortillas, 1 at a time, heating just enough to soften but not crisp, about 10 seconds per side. As heated, stack on paper towels, cover with a kitchen towel, and keep warm in oven. Add more oil to pan as needed.
3. Mix cilantro with chicken filling. Working with 1 tortilla at a time, distribute about 1/4 cup packed chicken filling down center. Fold tortilla in half over filling and thread 1 toothpick through top edges to seal. If assembling ahead, arrange filled tacos on a tray, cover with plastic wrap, and chill up to 4 hours.
4. Pour at least 1/2 in. oil into same pan and set on high heat. When hot, add 4 to 6 tacos (depending on pan size; do not overcrowd). Tacos should sizzle when they hit oil. Turn as needed until shells are crisp and golden brown, 1 to 2 minutes per side. Lift tacos from pan with a slotted spoon, draining oil back into pan. Lay tacos in a single layer on a baking sheet lined with paper towels and keep warm in oven. Fry remaining tacos the same way, adding more oil as needed. When all tacos are cooked, pull out and discard toothpicks. Serve with salsa on the side.

New Addiction





Bella and I have stumbled upon something new recently. Purchasing lovely clothing from other sellers on Etsy. I am officially addicted. We just received this beautiful piece from rosiegoa.etsy.com. If you haven't found her store yet, you are missing out. Just take a peek at all the beautiful, and vibrant fabrics that envelop her shop. I can't wait to purchase more from her. Bella immediately put the dress on when it came in the mail, and she hates wearing clothing in the summer months. (go figure)

Baby Love

What a wonderful Father's Day it was. I asked Steve what he wanted to do, believe it or not, all he wanted was to just be able to relax around the house! My, what a concept. At one point, a usually not cuddly, touchy-feely Bella was caught relaxing on Papas chest. Ahhhh.

Extreme Splashpark Fun!




Now that it is getting REALLY hot here in Phoenix, Bella and I are ready for something refreshing. We decided to meet a bunch of our really good work buddies at Tempe Beach Park today. Water, water everywhere. Next time I will wear a suit. There are kids everywhere, running amok, not a care in the world. Little "playground" style slides are incorporated into the splash pad, where big and little kids come sliding down like bullets onto the ground below with only about an inch of water below to cushion. Bella is the type to "watch" all the other children, not really ready to join in quite yet. She is very leery of the waterfalls, and any other type of spraying water, avoiding it at all costs, when others are running full speed ahead. All in all, it was a perfect day, now we nap....ahh sweet bliss...

Heirloom Baby Collection




I am really excited, I have been sewing for my neice Gracie, she is due on Bella's 3rd birthday. I haven't sewn hardly anything for babies. When Bella was this small, I was too tired to even think about it! Now, I can have all the fun creating for Gracie. I don't just want to give her Anything. I need it to be really special. I am obsessed with all the heirloom clothing that I have in my cedar chest that my grandmother and mother gave me. This new collection of fashions is inspired by the clothing worn by my mother in the late fourties. Simple, but well made. Being able to be passed down through the generations. The styles soon to be offered in store will be able to be worn by either gender, and colors will be available that either boys or girls can wear. This collection will be the perfect baby shower gift, I will present Gracie's collection of wares to her mother at the shower that I am to host for her.

Fresh Picks



Another custom, what fun! I love this apples and pears fabric, and so does the mommy that ordered these fun bloomers. I was put to the test, working with "minky" fabric showed to be a bit challenging. Hard to press, and slippery at times. I have hardly any experience working with fabric with so much "pile". It felt like a soft teddy bear while handling it. All and all, I think they turned out rather nice! Totally all girl...
One other challenge Bella and I faced this week was a angel food cake. We made it from scratch, it took us awile just to make the batter. I have this nonstick angel food cake pan that someone gave me, I placed it in the pan, halfway through baking (no I didn't open the oven door) it collapsed. I took it out of the oven after the time alotted, and it wasn't cooked all the way. Any bakers out there that would like to lend me some tips, that would be peachy. I love this kind of cake, and would like to be able to make one successfully! This is the second time we have attempted a cake like this. Maybe the non-stick pan?

Completion

I had so much fun making this for myself! Believe it or not, this is one of the only items that will hang in my closet that I have made just for me! I love it, the square collar adds dimension, but not too constricting. I am now offering it in the shop for Ladies and Little Ladies.

Something for ME

This top is my latest working. I have been blessed with the time this Monday to create something for myself. I am working with a very lightweight burgundy linen, perfect for this sweltering Phoenix heat. I love to show my items "under construction" It is so neat to me when I see a garment come together. I need to add buttons, finish the armholes, and hem. The buttons are a tough one for me, it takes me awile to find just the "right" ones. I will probably place buttons from my grandmothers button box on this top. This is a top I have been wanting to make for myself, and offer in my shop for a while. This beauty will be available for "Mommy and Me" in size S and M, then in size 2T-6. It will also be available with long sleeves.
